The basic ingredients for a batch of fudge aren't very extensive, and that might contribute to this confections' long lasting history. All you really need to make fudge is chocolate, sugar and butter and then your choice of additional ingredients such as walnuts, almonds or other choice nuts. Peanut butter fudge is a popular treat. Other top fudge flavors include chocolate walnut, maple walnut, vanilla and chocolate and penaut butter combined.
According to the book Oh Fudge!: A Celebration of America's Favorite Candy (1993 ed.) the first recorded instance of fudge comes from Vassar College in Poughkeepsie, New York. A letter dated Dec. 11, 1921, written by Emelyn Hartridge states that a friend's cousin had made and sold fudge.
The letter states, "Fudge, as I first knew it, was first made in Baltimore by a cousin of a schoolmate of mine. It was sold in 1886 in a grocery store [at 279 Williams Street] for 40 cents a pound. From my schoolmate, Nannie Hagner, I secured the recipe and in my first year at Vassar, I made it there -- and in 1888, I made 30 pounds for the Senior Auction, it's real introduction to the college, I think."

Do you enjoy eating fudge? While many people want to avoid delectable, sweet treats they are perfectly fine on a healthy diet when consumed in moderation. It's always important to make sure that if giving fudge as gifts that the recipient doesn't have a nut allergy. As fudge can be made with or without dairy products, ensure that you don't gift fudge to those with lactose intolerance or dairy allergies. Opt for dairy free fudge when appropriate.
The Pretty Bee has an easy, simple, dairy free fudge recipe that only requires three ingredients. Swap coconut milk for condensed milk and choose dairy free chocolate chips and powdered sugar.
Though I haven't personally tried the dairy free recipe above, I would imagine that you could use cocoa with coconut milk and your choice of sugar or powdered sugar to make your own dairy-free fudge as well.
